Pondok Brewery is the home brewery of Kevin Ryan and is so called because it is based in a “pondok” – in South Africa that is a wooden shed. The brew takes place outside, under a carport and the rest is done in the pondok.
On the right is the kettle, and the photo shows the wort being pumped through the wort cooler, through the window into the conical fermenter. Next to the fermenter is a freezer which is used to store the finished beer and the chilled water which is circulated through the fermenter to control the ferment temperature. The brewery started in September 2010, so it is 9 months old already. I intend to post aspects of the brewery design and the beers that I brew here.
